For the strawberry syrup with basil, rinse the strawberries with cold water and remove the leaves and the stem. Cut them into pieces. Grate some lemon peel and squeeze the juice.

Rinse basil with cold water and shake dry. Pluck the leaves from the stems.

Bring 500 ml of water to a boil with the sugar. Simmer until the sugar has dissolved. Now add the strawberries, lemon zest and juice and the citric acid. Boil for 4 minutes until bubbling. Remove the pot from the heat, add the basil leaves and let the whole thing steep for 20 minutes.

Line a strainer with a cotton cloth and filter the strawberry-basil mixture through the strainer into a pot. Now bring to the boil again.

Fill the strawberry syrup with basil into carefully cleaned bottles while still warm and seal immediately. Store in a cool and dark place.
