A great pasta dish for any occasion:

Squeeze the bread crumbs soaked in milk and chop with a cradle knife. Steam shallots in butter. Mix meat, steamed shallots, soaked, finely chopped bread roll and parsley together well in a baking dish. Season with salt, pepper and grated nutmeg. Form 12 (about 8 cm long) sausages from this quantity.

Roll out puff pastry on a little flour to the thickness of the back of a knife into a rectangle. Cut into 12 (8×10 cm) rectangles with a sharp kitchen knife. Place a sausage on each rectangle. Fold the dough over it, using a tiny bit of water to stick the edges together.

Rinse baking sheet with cold water. Place sausages on the baking sheet. Brush with egg yolk. Bake in oven heated to 250 °C for about 20 min. After 10 min, reduce heat to 200 °C.
