Remove the surrounding fluff from the quinces, which must be very ripe, clean them and cut them into pieces without peeling. Put them in a large jar with the alcohol, close tightly and leave for 2 weeks, shaking the contents once a day. Make a syrup with sugar and water and cool. Drain quince juice, pressing the fruit lightly. Mix with the syrup and pour the liqueur into bottles through a funnel lined with filter paper. Leave to rest for at least 4 weeks before enjoying.
