For the quince cake, first prepare the dough: Mix flour with almonds, salt and baking powder, cut in butter and rub with your hands in the flour mixture until the whole is fine crumbs.

Beat egg, add and quickly knead into a dough.

Leave to cool for at least 2 hours. Roll out to a thickness of 3 mm and fill a cake springform pan (260 mm) with it, prick the dough with a fork.

Now cut the quinces into small pieces. Boil water with pear syrup and add the quinces, cook until soft and blend to a puree without juice. Spread the cooled puree on the dough except for about 10 ml.

Mix 1 whole egg with the yolk, add the grated walnuts and the remaining quince puree, mix properly. Whip the egg whites until stiff and fold into the mixture, spreading it over the quince puree.

Sprinkle with the chopped walnuts and bake the quince cake in a preheated oven at 220 degrees Celsius for 30 minutes.

Preparation Tip:

If you do not get quince for the quince cake, you can implement the recipe with other fruit.
