Instructions:

For the poppy seed nut slice with spiced apples, first preheat oven to 170 °C and line a baking tray (40 x 30 cm) with baking paper.

Mix poppy seeds with nuts. Separate eggs into yolks and egg whites. Mix butter with powdered sugar, rum, vanilla, salt and grated lemon peel until creamy. Gradually beat in yolks.

Beat egg whites with sugar until creamy. Fold the beaten egg whites into the butter mixture, alternating with the poppy seed and nut mixture. Spread the mixture on the baking tray and bake in the oven (middle shelf) for about 25 minutes. Remove and let cool (about 2 hours).

For the cream, beat butter with powdered sugar and vanilla until well creamy, stir in apple brandy last.

Cut cake into 3 strips (40 x 10 cm). Spread jam on 2 strips and place one on top of the other. Place remaining strip on top and press down gently. Brush cuts all around with cream. Sprinkle surface with chocolate chips, sides with almond flakes. Chill slices for about 1 hour before cutting.

Tourne apple slices, lightly caramelize with sugar, maple syrup and apple juice, add spices and cook covered for 2-3 minutes. Add butter and assemble.
