Cut the avocados in half lengthwise, remove the pit, and then cut the halves in half lengthwise again. Peel off the skin. Cut the flesh into (not too thin) wedges.

Sprinkle avocado wedges with lemon juice.

Put flour on a flat plate.

Beat eggs, add salt and pepper.

Mix breadcrumbs with parmesan on a plate.

Dredge the avocado wedges first in the flour, then in the eggs and then in the breadcrumbs. They should be well covered. Gently tap off any excess bread crumbs.

Heat enough oil in a frying pan (do a cooking spoon test) and fry the avocado fries on both sides for about 3-4 minutes, until golden and crispy.

Preparation Tip:

The avocado fries taste best when served immediately. It is best to serve with a dip.
