Instructions:

Cut the cheese into 1 cm thick slices at the beginning, then cut to the size of the white bread slices.

Mix milk and eggs and soak the slices of white bread in it. Chop anchovies and olives together. Cover half of the bread slices with cheese, put a little bit of the anchovy-olive mixture on top and cover with the remaining bread slices. Turn the bread in the breadcrumbs to the other side and toast in the hot clarified butter until golden brown on both sides. Drain on a grid or on kitchen roll and serve with leaf salad.

Tips

* This spicy variation of the Poor Knights can be served with lettuce as a warm meal, but they are also a hearty snack for parties or just served with a glass of wine or a cool Pils!

* Smoked ham cheese is a semi-hard and sometimes also a hard cheese, which is smoked briefly after maturing. This gives it a typical smoked aroma and apart from that it has a longer shelf life.

Drink recommendation

It goes well with a cool pilsner or a glass of wine, e.g. a semi-dry one.

which stands up to the spicy fullness (Weingut Hupfeld/ Rheingau).
