Lamb Chops with Herb Salad

Instructions:

Preheat the oven to approx. 80 °C. For the salad dressing, mix well both vinegars with sugar, Dijon mustard, salt and pepper. Mix in olive oil and stir everything together to make a creamy dressing. Season the lamb chops with salt and pepper. Heat the oil and butter in a skillet, add the lamb chops and sear briefly on both sides over high heat. (Don’t over sear the chops so they stay nice and juicy and don’t get too dry). Remove from heat. Press the garlic clove in the bowl and add to the pan along with some thyme. Let lamb chops rest in the tempered oven for another 5 minutes or so. Meanwhile, marinate the frisée salad together with the herbs and arrange on plates. Add the finished lamb chops and serve.

Preparation Tip:

RECOMMENDATION: Tuscan or other white bread
