For the strawberry cream cake, bake a sponge cake base with 4 eggs, 160 g sugar and 120 g flour. Beat the egg yolks with 40 g sugar and 30 ml water until foamy. Beat the egg whites with the remaining sugar until greasy and stiff. Mix the yolks with the snow and stir in the flour.

Pour into a buttered, floured cake pan. Bake in the preheated oven for a total of 35 minutes. Bake at approx. 150°C in the beginning and increase to 170°C after half the baking time. For the cream, soak the gelatine. Mix curd cheese, strawberries, sugar, lemon juice and vanilla sugar with a blender. Whip the cream until stiff and stir into the cream. Squeeze the gelatine, dissolve in rum and fold in. Cut the cake in half and place half the cake in the springform pan. Then spread half of the cream on top and on the 2nd half of the cake the remaining cream.let the cream stiffen and decorate the strawberry curd cream cake.
