For the Salzburger Nockerln, beat the egg whites until stiff, then add the granulated sugar and a pinch of salt. Then carefully fold in the yolks and starch.
Grease an ovenproof dish with butter and granulated sugar and place in a preheated oven at 200°C until caramelized.
Then remove the hot pan from the oven, pour in the mixture and bake the Salzburger Nockerln in the oven at 200°C for 8 minutes.
