Try this delicious pasta dish:

Rinse arugula, shake dry and pluck into medium sized pieces. Peel and chop the shallots and sauté in butter. Blanch (scald) the tomatoes while hot, cool and peel. Remove the seeds and roughly dice the flesh. Add tomato cubes to shallots form and gently roll until liquid has evaporated. Fold in mascarpone and allow to melt over low heat. Make “spirals” according to package directions. Cut Parma ham into wide strips. Season the sauce strongly with salt and freshly ground pepper, stir in the ham with the arugula. Drain the pasta well and mix with the sauce.
