A simple but delicious cake recipe:

Mix flour and salt in a baking bowl. Add the cold butter cubes, stir briefly until floured. Then quickly chop the butter cubes into tiny pieces with a kitchen knife. (This operation should only take a few minutes, the butter should not become soft).

Add half of the water and stir quickly with a fork. Add only enough of the remaining water to form the dough into a firm ball with your hands. Wrap the dough ball in plastic wrap or parchment paper and place in the refrigerator (or freezer for about 20 min) for 2 to 3 hours. Continue as follows:

Simple pie dough: Remove the dough ball from the refrigerator and place on a floured cool countertop (a marble slab is ideal). Flatten it a little bit with your hand.

On top of it, with the pasta walker, lightly beat it a few times to make the dough flatter and more elastic. Roll out the dough from the center to a thickness of 1 cm. Turn the dough sheet to the other side so that both sides are floured. Continue to roll out from the center to a cornstarch (maizena) thickness of 3 mm. Gently fold the dough sheet around the pasta walker, lift and unroll from the pasta walker over the gratin dish (or cake pan).

For a pie lid: press the dough lid firmly into the pan, chop any excess dough into small pieces.

For a casserole lid: fold the dough
