For the elderberry brandy, wash the berries carefully. Then use a fork to remove the berries from the stems.

Boil the berries with the water for about 30 minutes, then pour through a sieve or pass through a whisk.

Now add sugar to the elderberry mixture. Scrape out the pulp of the vanilla pod and add to the mixture. Bring everything, including the pod itself, to the boil again.
