For the oatmeal pancakes, separate the eggs, beat the egg whites until stiff. Mix flour, egg yolk, milk, salt, sugar and lemon zest to a dough, fold in beaten egg white.
Peel apples and slice thinly, add to the batter. Bake in hot coconut oil until golden brown on both sides.

The oatmeal pancakes can of course be prepared with any other fruit.
