For the Colorful Chicken Vegetable Skewers, cut the chicken into cubes of as equal size as possible. Wash the peppers, cut them in half and remove the stalks, seeds and white inner skins. Cut the peppers into equal-sized cubes as well. Wash the zucchini, cut off the stalk and flower heads and cut into thicker slices. Clean the mushrooms and cut the bottom end off the stem.

Now alternate chicken, peppers, zucchini and mushrooms on the skewers. Place the skewers on a plate or platter, pour some oil in a bowl and brush the skewers all around with oil. Carefully season with salt and pepper. In a frying pan, heat some oil on medium heat. Once it is hot enough, put in the skewers. Put a lid on the pan and fry the skewers for about 3 minutes. Turn the chicken-vegetable skewers and fry on the other side, also for 3 minutes.
