For the sardine skewers, first fillet the sardines. To do this, cut off the head. Cut open on the belly side, remove the innards. Place the fish skin side down on the work surface. Remove the center bone and individual bones, using tweezers if necessary. Cut in half lengthwise with a sharp knife. Rinse the anchovy fillets with cold water and carefully pat dry.

For the marinade, peel and finely chop the garlic cloves. Pluck the parsley and thyme leaves from the stems and chop finely. Crumble the bay leaf in your hand. Squeeze the lemon. Mix all ingredients in a shallow bowl. Put in the sardine fillets and let them marinate in a cool place for about 1 hour.

Take out the sardine fillets and put them on the skewers one by one in a wave shape. Grill the sardine skewers for about 3 minutes on each side.
