Instructions:

Season fillet with salt and pepper. Heat clarified butter and fry fillet in it.

Prepare a kneaded dough from the ingredients listed and leave to cool for half an hour.

For the farce, dice the liver, onion and ham or crush them, add spices, egg and brandy.

Roll out the dough on a floured surface to a rectangle of 35 x 40 cm. Spread farce evenly on top, leaving a 2 cm border all around. Place fillet on top, roll up dough and place seam side down on a baking sheet lined with parchment paper.

Cut a hole in the center of the dough sheet to allow steam to escape.

Mix egg yolks with a little water, brush dough with it. Place in the preheated oven.
