Instructions:

Perhaps your new favorite bean dish:

1. heat vegetable oil in a large saucepan. Add potatoes, onions, carrots and leeks and sauté in oil for about 2 minutes, stirring throughout, until vegetables have softened a tiny bit.

2. add chopped chili pepper and crushed garlic and cook for another minute.

3. mix in ground coriander, chili seasoning and vegetable soup.

4. let soup bubble up, reduce temperature and simmer for 20 min, or until

until vegetables are tender.

5. fold in beans, season heavily with salt and freshly ground pepper, and make another 10 min, stirring occasionally.

6. soup in preheated tureen or individual bowls form, garnish with chopped cilantro and bring to table.

Tip: Serve this soup with warm hominy or possibly cheese bread.
