Instructions:

For the oat cake, mix flour and coarsely grated oat flakes with baking powder. Then add the raisins, cranberries and candied lemon peel. Beat eggs with coconut blossom sugar and margarine until foamy.

Stir in the cinnamon. Grate pears and fold in as well. Then stir in flour mixture, adding up to 50 ml orange juice if dough is too firm.

Pour mixture into a greased cake pan – about 24 cm – and bake at 160 degrees hot air for 45 minutes.

Preparation Tip:

If you don't like raisins, make the oat cake without them.
