For the melanzani casserole, finely chop the garlic and mix with the olive oil. Wash the melanzani, cut into slices about 0.5 cm thick, sprinkle with salt and leave to stand in a sieve for about 20 minutes.

In the meantime, preheat the oven to 200 °C top heat. Pat the slices dry, brush with the garlic oil on both sides and place on a baking tray. Brown for about 10 minutes on each side.

Hard boil eggs, peel and slice. Cut mozzarella into cubes. Mix tomato pieces with chopped basil, salt and pepper. Brush the baking insert for the Airfryer with the remaining garlic oil and alternate melanzan slices, tomato sauce, eggs and mozzarella.

Finally, sprinkle the Parmesan on top and bake in the Airfryer at 180 °C for 20 minutes until the Parmesan is golden brown. Serve the Melanzani Casserole with Tomatoes and Mozzarella with fresh salad.
