For the homemade soup seasoning, clean or peel the vegetables and cut them into even pieces, remove the stalk from the tomatoes. Finely chop the parsley and lovage and place in a large bowl with the vegetables.

Add the salt, mix and spread evenly on a baking tray covered with baking paper. Dry the vegetables at 100°C for about six hours. To do this, wedge a wooden cooking spoon into the oven door to allow the water to soak out.

Then finely grind the dried vegetables in a blender and store the homemade soup seasoning in well-sealed jars in a dry place.

Preparation Tip:

Do not put too many vegetables on a tray so that they dry faster. You can also grind the vegetables into smaller pieces after about 2/3 of the drying time, so that the drying is a little faster.
