Waffles: Sift flour with cocoa, baking powder and 1 pinch of salt, stir with sugar, vanilla sugar, butter, eggs and milk to a smooth batter. Brush the hot baking surface of the waffle maker with a little clarified butter. Pour in enough batter to thinly cover the work surface.
Bake the waffle for 5 to 6 minutes, remove.
Bake more waffles with the remaining batter. Cut the still warm waffles with a sharp kitchen knife, sprinkle with powdered sugar, serve with sauce and garnish with mint.
Vanilla sauce: slit vanilla bean lengthwise, scrape out pith with a small kitchen knife.
Stir 4 tbsp. milk with egg, sugar, custard powder and vanilla pulp. Add remaining milk and simmer on low heat for 1 minute, stirring continuously. Remove the sauce from the heat.
Bailys cream: whip cream with powdered sugar and cream stiffener. Fold in Baileys. Serve the cream and sprinkle with chocolate shavings.
