Pour the milk into a saucepan. Slit the vanilla stem lengthwise and add to the milk with the seeds scraped out. Bring to a boil and steep next to the stove for ten minutes.

In the meantime, in a baking bowl, beat the eggs, yolks and sugar (1).

In a small pan over medium heat, melt the sugar (2) until light brown caramel. Immediately add the water and make until the liquid has thickened to a syrupy consistency. Pour it into the bottom of the ramekins – or small cups, if desired.

Bring the milk to the boil again. Remove the vanilla pod. Pour the milk into the egg cream. Pour the mixture into the ramekins and cover them with aluminum foil. Put them in a steamer. Pour about a quarter of a liter of water in a saucepan, put the steamer top on it.

Cook the Flans Caramel over steam with the lid closed for fifteen to eighteen minutes, depending on the size and conductivity of the ramekins, until the quantity is firm to the bite. Leave to cool for at least 3 hours.

To serve, loosen flans just along the edge and invert onto plates. Garnish with stiffly whipped cream, if desired,
