For the strawberry mousse, blend about 2/3 of the strawberries, silken tofu, guar gum, sugar and lemon juice in a stand mixer until a uniform, creamy mixture is formed.

Chop the remaining strawberries and fold them in. Season the mousse with lemon juice and sugar, pour into glasses and refrigerate for several hours, preferably overnight.

Before serving, decorate with strawberry pieces, strawberry sauce, mint or lemon balm leaves.

Preparation Tip:

If the strawberries are very ripe and sweet, 100 g of sugar is enough for the strawberry mousse. Otherwise, you would have to increase the amount of sugar.
