Try this delicious cake recipe:

Preheat the stove to 180 °C.

Grease a deep round cake pan (20 cm ø), spread the bottom with paper. Remove paper, give light dusting with flour. Shake off excess fat.

Eggs and sugar in a large dry baking bowl form and cut with a hand mixer thick, light yellow and shiny.

Fold lemon zest, juice, sifted flours, almond kernels and potatoes lightly and loosely into mixture with a metal spoon.

Spread mixture evenly in the pan. Bake 35 min. until lightly golden. Bake 5 min. in the pan, then turn out onto a broiler to cool.

Either bring to table for afternoon coffee or serve as dessert. Cut almond cake in half and fill with whipped cream. Sprinkle with powdered sugar.

Also freeze for up to 4 weeks! To do this, cook a day in advance and put in the refrigerator without filling, so that the flavor can fully develop. Fill with whipped cream before serving.
