For the sandzipf, cream the butter with sugar, add the egg yolks and the egg and whisk again. Finally, fold in the flour.
Preheat the oven to 180°C. Pour the dough into a pastry bag and pipe onto a baking tray lined with baking paper. Bake the cookies for about 12-15 minutes.
When the cookies are ready, spread with apricot jam, assemble and finally dip the sandzipf in chocolate on one side.
Preparation Tip:
Vary the sandzipf with the jam filling. A lemon jam also tastes wonderfully refreshing for a change.
