For the herb crust:











Instructions:

Mix some olive oil with the crushed garlic and rub the carrels well with it. In an ovenproof roasting pan (preferably a copper pan), sear all around in a little olive oil and continue roasting in a preheated oven at 160 °C. For the herb crust, beat the waxy butter with a hand mixer until fluffy. Mix the chopped garlic, chopped herbs, lemon juice and breadcrumbs into the butter. Season to taste with salt and pepper. After about 20 minutes, remove the lamb from the oven and switch to top heat. Let the meat rest for a few minutes and then brush with the herb mixture. Place in the oven and bake until golden brown. Remove, carve and serve.

BAKING TEMPERATURE: 160 °C COOKING TIME: approx. 25 minutes RECOMMENDATION FOR COOKING: rosemary potatoes and ratatouille
