For the cinnamon buns, preheat the oven to 200 °C top and bottom heat. Mix the sugar and cinnamon in a powdered sugar sprinkler.

Unroll the puff pastry, sprinkle evenly with 2/3 of the sugar-cinnamon mixture, and roll up again. Cut slices about 5 mm thick from the roll, place on a baking paper, brush with soy milk and bake for about 15 minutes.

Sprinkle with the remaining sugar mixture while still hot.

The quick cinnamon buns can be eaten warm or cold.
