Wash the plums, halve, remove the seeds and cut into quarters.

Melt the butter in a pan and toss the crumbs briefly in it. Scrape out the vanilla pod and stir the pulp into the butter crumbs. Chop the walnuts into small pieces.

Mix the butter crumbs, walnuts, sugar and cinnamon with the plums and season with lemon juice. If the mixture is too liquid, add more breadcrumbs if necessary.

Preheat the oven to 180 °C.

Roll out the puff pastry on a floured work surface and spread the plum filling on the lower third. Fold the puff pastry in at the sides and roll up well.

Beat an egg and brush the strudel with it to give it a golden brown color.

Bake the plum strudel in the oven for about 30 minutes, let it cool and serve.

Preparation Tip:

The plum strudel tastes especially good with freshly whipped cream, which is whipped with a teaspoon of cinnamon.
