Remove the peel from the peaches, remove the stones, coarsely chop the flesh and mash into a fine puree. If desired, intensify the flavor with the peach liqueur.

Stir the peach puree with the juice of one lemon and one third of the sugar and let it all infuse.

In the meantime, put the remaining eggs, salt, sugar, milk and whipping cream in a saucepan and whisk gently over medium heat for twenty minutes, stirring continuously, until the mixture has thickened a little. Remove the saucepan from the stove and cool the cream.

Once the cream has cooled, stir together the double cream, bitter almond flavoring, vanilla extract and the peach puree and place in an ice cream maker with the cream. Proceed according to the manufacturer’s instructions.
