Pistachio foam:



For pistachio foam rings, quickly knead all ingredients for the dough together and let it rest in a cool place for approx. 1/2 h.

Then roll out the dough to a thickness of approx. 3 mm and cut out round cookies. Poke a hole in the middle of half of the cookies.

For the meringue, beat egg whites until stiff and stir in sugar. Place a ring of the meringue on the edge of the cookies and sprinkle with chopped pistachios.

Bake in the preheated oven at 170 degrees for about 10 – 12 minutes. After cooling, put together one cookie base and one with mousse with jam.

Preparation Tip:

Pistachio mousse rings taste great with any jam of your choice. Instead of the pistachios you can also use brittle or chopped almonds.
