For the meat skewers, remove fat and tendons from the meat, cut into 1 cm thick slices, rub with pepper and salt and fry in hot oil on all sides. Drain on kitchen paper.

Cut bologna slices in half and roll up. Dice cheese. Cut pineapple slices into quarters. Drain cornichos. Wash and dice peppers.

On long skewers, alternate meat slices, sausage rolls, cheese cubes, pineapple, cornichos and the peppers.

Serve the meat skewers skewered on a small melon.
