Lamb Chops with Braised Garlic

Instructions:

Cut the whole garlic bulbs in half with the skin and sauté them in a fireproof pan in a little olive oil.

Turn once and push to the edge of the pan (this will allow the garlic to continue to saute and impart the spicy garlic flavor to the chops).

Season the lamb chops with freshly ground sea salt as well as pepper and sear briefly but hot on both sides. Remove chops from pan, add more oil and spread thyme and tarragon on bottom of pan.

Place chops back on top, add olives and let everything sit for about 6-8 more minutes in the preheated oven at 150 °C.

Serve in the pan and drizzle again with best olive oil at the table.
