For the lamb chops a’la Sigrid, clean the individual chops nicely and remove any sinew or excess fat. Finely chop the herbs and set aside.

Press or very finely chop the garlic cloves and set aside as well. Pepper and lightly salt both sides of the chops, then generously sprinkle the pressed garlic and herbs on top and press down lightly.

Finally, drizzle a little lemon juice over the top. Preheat the oven to 50°C and prepare a suitable saucepan or pan.

Heat the olive oil in another pan and sear the chops on both sides. Then place them in the prepared dish and put them in the preheated oven.

Let them rest for about 5-10 minutes. In the meantime, prepare a sauce from the roast stock by adding white wine. (reduce 2x)

Preparation Tip:

Arrange the lamb chops with saz potatoes, carrot pieces cooked in soup (cubes) and the sauce. Finally, sprinkle some chopped herbs on top.
