Instructions:

Cut kidneys in half lengthwise, clean and soak for 1 hour. Dice.

Clean, rinse and slice celery. Peel onions, cut into quarters. Peel, core and cut apples into wedges.

Mix wine and same mass of water, pour in apple slices. Fry kidneys in hot fat. Remove from frying pan, season with salt and season with pepper. Sauté celery and onions in the frying fat, add apple slices. Dust with flour and fry briefly.

Pour about half of the wine-water mixture and the clear soup. Season with salt and pepper and sugar.

Mix the vegetables with the kidneys and marjoram and shape into a pie or possibly tart springform pan (24 cm ø).

Roll out the defrosted puff pastry and place it as a lid over the mold. Prick the dough several times. Mix egg yolk with 1 tsp. water and brush the dough with it.

Bake in the oven (electric oven: 200 °C / gas: level 3) for 15 to 20 minutes.
