For the apple cream cake, first prepare the base. Separate the eggs and beat the egg whites until stiff. Beat the egg yolks, powdered sugar and water until thick and creamy.

Mix flour with baking powder and mix well. Carefully fold in the snow and pour the mixture into a greased springform pan. Bake in the oven at 180 °C top/bottom heat for about 45 minutes.

Remove the cake from the oven, let it cool down and take it out of the springform pan.

For the cream, peel the apples and cut into small cubes. Stew apples, granulated sugar and cinnamon sticks with a little water until soft, about 10 minutes. Strain soft apple cubes and let cool.

Whip the cream with vanilla sugar, powdered sugar and gelatine until stiff, add the apple cubes. Spread the cream on the base. Place the lid on top and refrigerate for about 3 hours.

For the garnish, whip the whipped cream until stiff, brush the cake all around with whipped cream and decorate with the remaining whipped cream with dots. Sprinkle cinnamon in the center of the apple cream cake in the shape of an apple.
