Instructions:

Mix the sourdough with the salt, flour, olive oil and enough lukewarm water to gradually form a sticky but still relatively soft dough. Knead by hand for 15 min until you get an elastic compact but not too firm dough that comes off the walls in the baking bowl as a soft ball.

Cover with a dampened kitchen towel and let rise in a warm place for 2 hours, until doubled in size.

In the meantime, saute the onions in a tiny bit of olive oil until translucent.
