Mix the sourdough with the salt, flour, olive oil and enough lukewarm water to gradually form a sticky but still relatively soft dough. Knead by hand for 15 min until you get an elastic compact but not too firm dough that comes off the walls in the baking bowl as a soft ball.

Cover with a dampened kitchen towel and let rise in a warm place for 2 hours, until doubled in size.

In the meantime, saute the onions in a tiny bit of olive oil until translucent.

Stir the chili flakes, a touch of cumin and coriander, and a tiny bit of pepper and salt into the onions; cool.

Press dough on a floured baking board into a large flat patty (pizza) – do not knead. Spread with tomato chunks- tomato paste mixture unegal, spread onions over evenly, then spread anchovies and olives evenly, sprinkle with thyme, a tiny bit of salt, pepper, sprinkle cheese chunks over, drizzle a tiny bit of olive oil over.

Pour into the oven on the baking stone heated for 1 hour (level 7).

Bake at high temp.(level 6) until crispy to the end, baking time depends on the stove.

Alternatively cook on a baking tray. Form small pizza rolls from any leftover dough, brush with a little olive oil, sprinkle with caraway seeds and coarse salt and bake until crispy.

Topping funzt likewise with normal pizza dough.
