For the Grünkern-Rosinen-Weckerln dissolve the yeast in water and mix with salt, egg and honey. Mix the mixture with the green spelt and spelt flour to form a dough.
Add margarine only in the last third of the mixing process. When the dough is finished kneading, mix in nuts and raisins. Let the dough rest for about 20 – 25 minutes.
Divide into 40 equal pieces and form (grind) round Weckerln. Place on a baking tray lined with baking paper, brush with water and sprinkle with coconut flakes.
Let the rolls rise for about 30 minutes in a warm place. Bake in a preheated oven at 220 °C for 5 minutes, then bake at 190 °C for about 15 minutes.
During the entire baking process, place a container with water in the oven.
Preparation Tip:
Instead of raisins, you can also prepare the Grünkern-Rosinen-Weckerln with prunes or other candied fruits.
