Instructions:

Quarter or eighth broccoli lengthwise, including stem end (leaving a long stem end on the roses). Remove peel from carrots, cut lengthwise into eighths. Remove peel from garlic.

Blanch (scald) broccoli and carrots in boiling salted water for 3 min. Remove, rinse, drain.

Heat oil in a large frying pan. Roast whole garlic cloves, turning, until lightly browned (takes about 5 min). Remove garlic and keep warm.

Add vegetables to skillet, dust with curry, then roast, turning, also for 5 minutes. Sprinkle with sugar and caramelize. Now arrange with the garlic on a warmed platter. Garnish with lime wedges before serving.
