Cut the beef fillet into fine strips. For the marinade, mix the soy sauce with chili sauce, oyster sauce, ground coriander and cornstarch. Drizzle over the fillet strips and season with salt and pepper. Let marinate briefly. Meanwhile, remove seeds from peppers and cut into strips. Cut the pea pods into lozenges and the shiitake mushrooms into bite-sized pieces. For the stock, mix all the ingredients. Now heat the sesame oil in a wok pan. Lift the meat out of the marinade, let it drain a bit and stir-fry it in the wok. Lift meat out and keep warm. Add bell bell pepper, pea pods and mushrooms and stir-fry in wok for 1 minute. Again, stir in meat. Pour in stock as well as remaining marinade. Add the sprouts. Bring everything to the boil briefly and then arrange in bowls.
