Instructions:

For the dough, prepare butter, flour, egg yolks, salt, sugar and water with the dough hook, then with cold hands. Cover and leave to cool for 30 minutes. Bring juice of one lemon and syrup(1) to boil. Cut fennel into slices and cook in syrup for 7 minutes, drain. Roll out dough and place in a tart pan, pressing firmly to smooth the edges. Prick the bottom. Bake in the oven (electric oven: 200 °C / convection oven: 170 °C / gas: level 3 ) for 15 minutes. Remove peel from oranges, cut into 1/2 cm thick slices. Sprinkle the tart base with ground almond kernels. Place fennel and orange slices on top, sprinkle with whole almond kernels, brush with syrup (2) Bake at the same heat for 15 minutes.
