For the coffee cake, separate the eggs and beat the egg whites until stiff. Mix yolks, powdered sugar and coconut blossom sugar until creamy.

Mix in coffee powder, espresso and oil, stir in flour and baking powder well. Carefully fold in the snow.

Pour the batter into a greased and floured baking pan. Bake the coffee cake in the oven at 180 °C top/bottom heat for approx. 30-40 minutes.

Preparation Tip:

The coffee cake can be covered with chocolate icing.
