Separate the eggs. Put 3 egg yolks separately in a small bowl. 2 egg yolks are no longer needed.

Beat egg whites until foamy. Add granulated sugar and vanilla sugar and beat until very stiff.

3 Add the egg yolks and flour only briefly, otherwise the beaten egg whites will collapse again.

Form the dumplings with a dough card and place them in a baking pan coated with oil and sprinkled with sugar. Bake at 180 °C in a preheated oven for about 20 minutes until golden brown.

Then sprinkle the Salzburger Nockerl with powdered sugar and serve quickly (while still hot).
