For the lime butter with Parmesan, rinse the limes with hot water and grate dry. Grate all the zest from all the limes with a coarse grater. Put the grated peel into a bowl.
Grate the Parmesan cheese and mix well together with the butter, salt and zest grate.
Pour the still soft lime butter with Parmesan into a piping bag, portion and place in the refrigerator for at least 20 minutes.
