For the cheese spaetzle casserole, first prepare the spaetzle according to the basic recipe. Preheat the oven to 160 °C.
Cut 1 onion into rings, chop 1 onion. Sauté the chopped onion in a little olive oil, pour in whipping cream, season with salt, chives and pepper.
Grease a baking dish. Put a layer of spaetzle, sprinkle with cheese and repeat once or twice. Finally, pour the whipped onion mixture over the top and mix if necessary.
