For the Tyrolean asparagus and bacon pizza, sift the flour and make a well. Crumble in yeast, add sugar and 1/4 l water (lukewarm). Mix with flour to a liquid pre-dough.

Let the pre-dough rise for about 10 minutes and then knead it with olive oil and salt to a homogeneous dough and let it rise for about 15 minutes in a warm place.

Wash asparagus, peel and cut off ends. Cut stalks lengthwise into thin slices and cook in boiling water with salt and sugar for about 5 minutes. Remove and let drain.

Preheat oven to 250°C. Cut dough into quarters and roll out dough piece on some flour.

Place on an oiled baking sheet. Spread strained tomatoes on top and season with salt and pepper. Bake the pizzas in the oven on the lowest rack for about 8 minutes.

Dice mozzarella, finely slice pecorino. Spread mozzarella and asparagus on pizzas and bake for another 4 minutes.

Remove and immediately top with HANDL TYROL Tyrolean mountain ham, arugula and pecorino.

Drizzle with Aceto Balsamico and the olive oil and serve the Tyrolean Asparagus Bacon Pizza.
