Cut the primtjes into 4 to 5 cm diamonds. Grate the potatoes and add the egg yolks. Cut the chives into rolls, add them and season with salt and nutmeg. Arrange the cookies by hand and fry in hot oil.

Remove the peel from the apples, stone them and cut them into small pieces. Remove the skin from the onions and cut them into rings. Sauté the onion slices in oil, add the apple slices, extinguish with red wine and cook until soft. Clean the frisée, rinse and spin dry.
