For mustard eggs, cut eggs in half and remove yolks.
Mix the yolks with the remaining ingredients until smooth. It should be a creamy mass. Stir in 1 tablespoon olive oil if desired.
Squirt the filling back into the halved egg whites with a piping bag and sprinkle the mustard celebrations with some chives.
