Put the ham with the bacon and the onion through a meat grinder and mix with salt, pepper, the soaked, squeezed bread and the egg yolks to a smooth dough. Carefully fold in the stiffly beaten snow at the end.

Butter small cake tins, roll out the puff pastry to the thickness of the back of a knife, fill with the meat mixture, place a lid of puff pastry on top, press smooth, brush with the milk and bake at medium heat until golden brown.
