For the dal bhat with vegetables, put rice in a pot, pour water, add the remaining ingredients and finish cooking the rice as usual.
Lightly sweat the vegetables, chili, ginger and onion in a large pan, then add the remaining ingredients and cook with the lid closed.
Remove lid and let remaining liquid boil down until a thick juice forms. Season again with salt and turmeric.
Preparation Tip:
In Nepal, the food is quite spicy. If you like, you can cook the seeds of the chili peppers in the dal bhat with vegetables.
